The Ultimate Oyster Experience is a must do for oyster lovers! As our guest, you will guided in what to look for in an oyster, and the five pitstops of flavour – brine, creaminess, sweetness, mineralisation and umami which make up the concept of ‘merroir’.
Hosted by the Royal Agricultural Society of NSW, with farmers and Sydney Royal judges, this is a transformative tasting experience showcasing some of the best oysters from the Sydney Royal Aquaculture Competition. On Friday, we were thrilled to learn the Champion Sydney Rock Oyster was awarded to Australia’s Oyster Coast Appellation Oysters Bistro Rock Oyster from Merimbula Lake. You will also have the opportunity to taste other oyster species including the Angasi, Australia’s flat oyster, and a Pacific Oyster.
The tastings are perfectly matched with Borrowed Cuttings Picpoul Blanc (Bateman’s Bay & NSW Central Ranges) a widely celebrated wine hailed by the French as being the best match for oysters. You will also be offered an Oyster Stout, made specially for the festival by Big Niles Brewing Co at Dalmeny.
Ultimate Oyster Experiences run for around 50 minutes and cost $125. Saturday General Admission tickets are also required and NSW Discover Vouchers are accepted at checkout.
