World Oyster Opening Championships

The countdown is on!

Congratulations to our 2025 Australian Oyster Shucking Champion Greg Carton! Greg hails from Broadwater Oysters on Pambula Lake, Sapphire Coast NSW.

We are proud to host the Australian Oyster Shucking Championships, where the overall winner earns the John Susman Medal, and the honour of representing Australia on the world oyster shucking stage at Galway, Ireland in September.

Soon, Greg will face not only the best shuckers from around the world, but the famous Galway Flat Oyster, a seasonal sub-tidal oyster that originates on wild, self-sustaining oyster beds on the West Coast of Ireland. Its smooth, buttery, rich flavour is highly sought after during the season, which runs from September to April.

Such an oyster is a far cry from our beloved native Rock Oyster. An intertidal morsel boasting a sweet, creamy minerality that is enjoyed year-round, it’s shell is both deeper and stronger than the flat. So, our champions practise on Ostrea Angasi, Australia’s native flat oyster.

The world title is currently held by Renars Purmalis from Latvia, continuing his winning streak from 2023.

Former Australian competitors include Gerard “Doody” Dennis of Batemans Bay (2023 and 2024), Jim Yiannaros of Batemans Bay Oysters (2022), and Jim Wild (Jim Wild’s Oysters, Shoalhaven) who won the World Championship in 1984.
